Is there anyway I can hide player chat from displaying on screen? I can stop it from displaying in the chat box but it still displays on screen regardless of my settings.

Unfortunately it's a bug that's been around since the start of RS3 and that Jagex hasn't gotten off of their lazy asses to fix, many posts on official forums about it.
