Knives are good on yaks, in fact, that is the most commonly used weapon there for ranged training.

No. You have to complete all of the TRIALS. While Neitiznot is used mainly in Fremmenik Isles, it is unlocked by the Trials.

not really, when you finished the trials, you can't go to neitiznot and kill some yaks

 

you first need to start fremminik isles and do a little part of the quest, then you will have acces to Neitiznot (and also to the yaks)
