What are the exp/hr for the following:

 

1. Powermining granite

2. Concentrated gold at Living Rock Caverns

3. Killing/mining rock strikers/protectors at Living Rock Caverns

 

And also, would a drag pick make that much of a difference, or should I stick with my rune pick?

 

I'm 66 Mining at the moment but planning on getting it up soon. Probably aiming for 80.

The xp from the living rock monsters are insignificant compared to the other methods. In short, don't do it.

 

Powermining granite is ~60k per hour, but can top 80k per hour if you are insanely good at the technique.

 

Living Rock gold is about 50k per hour.

So what would you recommend for training, granite to 77/80 and then concentrated coal/gold from then on? (If I feel like trianing it after 80)

Yes, and also throw in stars from time to time to earn yourself great xp and decent cash.

Since you seem to plan on doing a significant amount of mining, you should get a dragon pick. I've heard from some miners at LRC that it speeds up your mining there by 15%, so I would guess that overall it speeds up all mining by 15%.
