Do I have to do any damage or hit a jogre and unicow for their deaths to count with the diaries? Can I stand there and let the rings do the work?

You might have to attack it once, but not necessarily do damage. Maybe drink a wine so your attack is 0, guaranteeing a miss, then hit the Jogre, then proceed to stall out the rings of recoil/vengeance.
