Is there a specific option to choose which combat skill to level exclusively? Ex. If I want to level strength to 200m instead of maxing defense to 99, or if i want to level ranged without receiving defense exp?

Click the tab on the far left. The one you'd check your combat level with, and click the xp button and choose from there.
