Can anyone tell me where the place to mine Granite is at?

It's deep in the desert directly south of the bandit camp and near the Ancient Magicks pyramid.

Oh yeah. That's right.

No waterskins are necessary. I find it useful to bring a full set of desert clothes and wear them, however.
