I'm level 79 with 115k xp to go until 80, so I've got every fishing method available to me... what's the quickest way to level?

Barbarian is very fast, although there's no profit/reward.

 

 

 

Shilo village fly fishing is also very fast, and you can bank your catches.

 

 

 

Monkfish are also quite fast, but they produce the highest profit. I would recommend to go with a mixture of barbarian and monkfish, for a good balance of profit and experience.
