Depends on the shop, although most things are around 24 hours (Runes, Broad tip/unfinished, Feathers etc.)

Regardless of quantity, I've always observed a full respawn time of 24 hours.

When I was gathering items for cooking gnome food, I found that bars restock their beers pretty quickly, probably in about an hour or two. The gnome food suppliers restock in like 10 minutes.

I guess various shops have exceptions then.

 

I buy magic runes from Baba Yaga and the Mage Guild daily. Baba Yaga stocks 300 deaths, while there are 1k deaths at the Mage Guild, yet over a given amount of time, an equal percentage of runes out of the shop's total replenish. This is just one example.

 

But yes, there are exceptions then.
