I have a few of each of these, but am having trouble figuring out exactly what I should do with them... is there something important I can do with these bones?

You can sell them to Barlak a cave goblin in Dorgesh'kaan for gp and Construction XP.

Oh cool, how exp does each bone give?

The trade-in thing is just for Curved and Long bones, which give 2250 and 1500 construction XP respectively.

 

Chewed bones have to do with pyre ships.
