Since they are in the item db, I assume they would be dropped by them. Do you have any evidence to the contrary? (Drop logs or similar)

Disproving that a monster drops something is much harder than proving it. We add things to the Bestiary based on logic, personal experience and reasonable suspicion. Since the Warped Tortoises are indeed Tortoises, then it seems logical and reasonable that they would drop the Perfect shells.
