what if i don't check on my herb or seed for like a long long time what will happen?

Nothing.

 

If you use super compost they should survive about 90% to 95% of the time anyway.

If it stays healthy until fully grown it will stay fully grown forever until you pick it. If it gets diseased before it is fully grown and you do not treat it, it ends up dead.
