But if you set your harvest to 100% herbs 50% flax

then change it to 100% coal 50% maples right before you collect

you'll get 100% coal and 50% maples

Ok what I mean is I currently collect my workers resources at 10pm Australian time. How can I change it so my workers have the resources ready at say 2pm.

So that when you put money back in, that's your collection time.
