^Pretty much this, except it would be a farming tick specifically, not the game tick which happens much more frequently and does not impact farming cycles.

 

After being grown plants that yield ongoing produce unless purposefully removed retain a farming tick which cause they to grow 1 fruit,berry,branch etc. up to the maximum they can yeild (so 6 for fruit trees).

As Merciful right suggested getting 7 just means during your harvesting this tick passed and as the tree had less than 6 fruit it grew one meaning you ended up with 7 in total.
