What do it mean when it says

Beaver

Forages logs and planks

Does it mean it will make logs and planks out of nothing?

yeah i think after some time like 10 mins it randomly produces items that you can withdraw

When I made some beaver pouches and scrolls I used them up at Magics, thinking they could speed it up.

I spent hours with them, and they didn't forage a single item, and the scrolls never worked.

But normally, foragers DO make items out of nothing. You get a message in your chatbox saying "Your familiar has produced an item!", and you withdraw it from their inventory. But keep in mind you can't put them BACK in their inventory, so it's wise to withdraw when you're at the bank.

Pretty much it. Although, I've found that the beaver's foraging rate is quite a bit slower than those of other foraging summons like the ibis and the granite crab.
