Jagex answered this before, the plates pick up metal scraps from the anvil.

If that were true, the anvils would disintegrate every 5 minutes...according to the Law of Conservation of Matter, matter cannot be destroyed or created. Runescape just defies physics. Leave it at that.

I think you mean the Law of Conservation of Energy. Obviously what's happening is that the energy you expend when hammering the bars is not all used up by deforming them into platebodies. The excess is being transformed into steel - jagex must have put this feature in to stop your hammer and anvil from melting!!

5kg sounds like a lot but it's possible some of it is thrown away as scrap metal (never smithed irl so don't know). Btw Jagex are the ones who made pinapples originally grow on trees so when it comes to Physics..
