dont know the exact answer to your question, but i think you gain stamina while you run. stamina directly affects your health. actually, now that i think about it, that doesnt seem right. dont listen to me im a lunatic.

Eating obviously boosts your health up to it's max. Ambulance missions permanently increase it's max. Visiting a lady of the night will also temporarily boost it.
