As for the sigs, they're really simple. Not terrible though, but could do with some spicing up. But then again, there's not a lot that you can do with Elements.

You could put a bit more effort in. I suppose that Elements doesn't have as many capabilities as CS3 as it's more of a photo editing program, while CS3 is an all-rounder. It's good to see that you've experimented with layer & colour changes. But you really need to work on your text.
