You're looking at this in the least practical way. We could pull together at least 300kT if we scrapped some stuff, and they don't need 2,000kT at the very beginning of the session. If I'm correct, we only need one extra miner anyways, assuming the new crew doesn't speed the process up at all. And we could, I don't know, RESEARCH food replicators, better mining, and Lee's food pill idea? Any of those alone could likely solve this problem.

Therefore we need only forfeit the output of our mining ships to acquire the necessary resources. We can make another, to avoid using starvation resources. EDIT: Ross, you said we had 2,500kT and needed 2,700kT... We could easily get that, along with resources for the month, assuming we scrapped a few things... and assuming we put our mining ships to work.
