I plan on starting the mini game and selling off all the assets I get from the mini game. What would you recommend I focus on to sell off for the most gp?

I always do 100% flax or maples and 50% coal. the only downside to maples is that they are getting hard to sell.

Well coal in it goes for 90gp each, so if you can mine your own iron, this can be a good source of steel bars for merchanting.

If you're only after the money I'd say 10 Coal, 5 Flax, because I'm finding Flax very hard to sell these days.

The seeds you get from maples can make huge amounts of money compared to other resources. I would do 100% maples and 50% flax or even herbs.

maples are really, really hard to sell. However, the seeds are easy to sell, and the maples are great for burning.
