What familiar would be better while mining granite and only banking the 5kg's, a war tortoise for extra space or an obsidian golem for the mining boost?

Use both? the golem to help you get a full invy then dismiss it and get the tortoise to carry more.

That would make me use 7k in pouches for every granite trip, while I could be using 3-4k in pouches for ~50 minutes of mining.

Yep tortoise, granite usually 1-2 hits anyway.. you wouldn't notice a difference with a golem.
