I am assuming this is for GWD, it depends where you are and what you are doing. For overall usefulness, the holy symbol in conjunction with the prayer book from The Great Brain Robbery can be used to cure poison.

Saradomin if it's for GWD, as the saradomin monsters hurt (I found out the hard way, bye bye full void.. #-o)

I think the Great brain robber poison cure is useless, as it provides no immunity...

They give the same prayer bonus. For other bonuses, the unholy symbol gives slight attack bonuses and the holy symbol gives slight defense bonuses.
