what's the difference between armour type "All" and armour type "Hybrid"?

I think the armour contribution is slightly different in each case. In full tetsu etc, equipping the All class onyx (i) reduces some of your block chances while raising others, whereas the Hybrid class Tokkul-Zo will raise all 3 of your block chances. This is despite the Onyx (i) having a higher armour rating than the Tokkul-Zo (27 vs 2 iirc).

In real life MMO you don't get 99 smithing by making endless bronze daggers.

To my understanding:

All will try to balance your stats over the 3 classes, which often mean it will lower the strongest and raise the lowest whilst doing little to the middle.

Hybrid just gives stats to all 3 classes.
