The simple answer is that I love to smith and the only other skill that comes even close to my liking for smithing is mining. I'm not mining and smithing for the sole purpose of getting 99, even when I do get 99 mining and smithing, I'm going to continue mining and smithing.

And money, get that smithing cape fast! So I've noticed this thread's regulars all follow similar trends.
