All Mexican Restaurant food I've ever had has given me a variety of digestive ailments. My parents regularly cook such food well themselves by not having dirty, cheap equipment and [cabbage]ty ingredients and it's the best stuff I've ever had. I also assume Mexicans would make good Mexican food even using cheap ingredients, because there's a pride in the food of a culture and they probably have had some degree of experience.
