You'll always get gold charms when you go charm hunting. Think of it this way. Right now, maybe you can't make much with crimson charms. But later on, you won't have anything to make with gold charms, and you'll wish you'd spent all that time collecting crimsons instead. If you kill something lame like hellhounds or fire giants, you'll get the gold charms you need to make the granite crabs and not much else. If you kill something better like dust devils, you'll still get all the gold charms you need, but you'll also get a bunch of crimson charms on top of that.
