Or swing around like that but with each rotation you pull out a new weapon? The agility one suggested in the OP would actually be perfect for defense. Ranged could work like the dungeoneering one, except with three monsters popping out and you killing them with one shot of a different ranged weapon. Something like: Zombie pops up behind you and you quickly turn around and hit it in the face with a throwing axe. Halfway through the axe's flight a goblin comes up to the side and you throw a javelin at it, hitting it square in the chest. Halfway through that javelin's flight a troll appears behind you, you turn around, bow drawn, and aim at it. The troll runs away and you shoot the arrow straight up and catch it on the way down. Agility could be like that, but with things shooting at you and you dodging them in awesome ways. Say, backflip over an arrow, matrix-slide under a javelin, sidestep away from a magic attack.
