1: You need to trace what you want to stay, in this case the person, and delete whatever is not the person. Not as easy as it looks. 2: If you delete the background, just save it as a PNG. That will preserve it's transparency and colours. If you want to save it as a JPEG but still a render, fill the background with a random, bright colour which is not in the render. 3: If the render has it's background transparent, just copy and paste it. If it has a background, delete it and then copy and paste it.
