I didn't really notice any slowdowns compared to killing the meleeers when killing the mages with Magic instead of with Ranged, personally.

You can't actually get rid of these items (must always be traded in equal amounts) unless you die. If you die, you lose it permanently (does not drop). Right click --> Destroy

If everyone is disconnected, that won't change a thing. But it would be useful for when it's only one person having net problems.

I used immortality crystal once I reached Wave 36 (pretty much the only crystal I used, had several of them left along with restoration ones) That way, I didn't have to worry about messing up during the Jads and I had some immunity left for Har-Aken (Not to mention more immunity and restoration crystals if needed.) I tried bringing only Magic at first, because people told me they were able to 100% mage the Kiln, but I would splash on the rangers so often that I ended up bringing Melee gear for them. Mage works fine on the Mejs, so you don't have to bother bringing range gear. What you could do for the 6 Dill wave is use an immunity crystal (might not be needed) in order to completely avoid their spec that hits you 1.5k+, then you can tear through them with dragon pickaxe without much trouble. You could also bring Dreadnips to safe spot the Dills, but I wouldn't recommend that since it takes ages to kill just one.

Why is that? Do abilities not take in account the off-hand weapon's speed? In which case an off-hand Chaotic rapier or longsword would be better than off-hand Drygore mace?

Like I said, try asking JMods over e-mail or via the RSOF. If everyone else who is P2P has OSRS access and you don't, it's likely an error was made and they accidentally didn't give you OSRS access.
