My favorites are the Blue Stilton (with or without port), Gorgonzola, lol, I really like them all, but one of the best is the Gormas, it's a combination of Mascarpone and Gorgonzola, really good! Then you have those red-skin (correct translation? I doubt it!), Port Salut, Chaum etc. most I've tried of them were a little boring, I've had a few very strong ones though, but they're generally very mild and open for everyone. Brie and Camenbert, I really like those, it's very simple. Who doesn't like Brie or Camenbert? At work we sell Camenbert wth Calvados, now that's an awesome combination. And Brie is awesome with tosti's! I think I prefer Brie over Camenbert. Goat cheese is also good, but more a cheese for in recipes. Warm out of the oven with honey and salad. Or cold and crumbled in a salad with some bacon cubes that are dry roasted and some pine-tree seed. You also have the so called AOC-cheeses. Specialy branded and tested to get the sign. Usually a bit stronger than the normal version of the cheese. For example Brie de Meaux and normal Brie has A LOT of difference in taste. The ones I had are all very strong, and you shouldn't put too much on a piece of toast or w/e snackcup thing you're giving to your friends when they come along. But when you bought an AOC cheese you bought quality, and you pay for it. I think the most expensive one I've seen was 12 euro, for 200 grams. Anyway, I think my all time favorite cheese is the St. Nectaire! :D I havn't had it for 2 years now, unfortunualy. I can't find it here in Holland, atleast not at the place where I live. It's pretty self explanatory as it's a smoked cheese, but the apple flavour through it is just devine. The actual cheese itself isn't as hard as most cheddars etc. It's not quite a soft cheese, but it's not exactly cheddar. :) It's just mmmmmmmmm!!! PS. Cheddar Description: The most widely purchased and eaten cheese in the world. Cheddar cheeses were originally made in England, however today they are manufactured in many countries all over the world. Fully cured Cheddar is a hard, natural cheese. It is shaped like a drum, 15 inches in diameter, with natural rind bound in cloth. Normally, the color of Cheddar ranges from white to pale yellow. Some Cheddars, however, have a color added, giving the cheese a yellow-orange color. Cheddar is always made from cow's milk and has a slightly crumbly texture if properly cured. If the cheese is too young, the texture is smooth. Cheddar gets a sharper taste the longer it matures. It is generally matured between 9 and 24 months. The important thing in purchasing Cheddar, is to consider the age of the cheese. Milk is heated to 86 degrees F and inoculated with a lactic starter culture. After an hour rennet is added. When the curd is firm, it is ground down to marble-sized bits which are heated to 100 degrees F. The whey is discarded and it is sliced into slabs. The curd is pressed overnight and stands for 4 days in a cool atmosphere. Unlike other well known cheeses, Cheddar's name is not protected so it has been used and abused by many producers around the world. There are many different types of cheddar. :) The quote above says that they range in colour, I prefer the whiter cheddars. For some reason they just taste better. :D Mature white cheddar > Any other cheddar. I'd still take a smoked applewood over any cheddar though. :wink: Notoriously Trollish.
