If you accidentally attack him or he attacks you (which happens to everyone once in a while, we're all humans after all), just go upstairs and come back, and he will have forgotten about you! I have found that it is possible to physically right click -> pickpocket up to five times per knockout, which will usually make your character do three pickpockets. However, you need to listen to the game sounds, to hear when your character is actually doing the pickpocket - it doesn't match the animation anymore. The third one always happens after the bandit wakes up. Yes, exactly. It isn't possible to get three in, ever... Although you might have enough time to click the pickpockets, your character does not.
