Well... it's quite simple actually~ Thin wire rapped around a metal core in the microphone vibrates with the sound of your voice, these vibrations are then re-altered into a voice signature, this is then transmitted through wires to telephone relays who distribute the call to the number you've dialled (electrical impulses from the dial pad).
