englandman66 Posted November 30, 2006 Share Posted November 30, 2006 Note: If you don't have level 99 Cooking in real life, make sure you have your own wise old person on hand to keep an eye on things at high temperature. 1 9-inch uncooked pie crust Filling 1 cup fresh raspberries 1 cup fresh cranberries 2 1/2 cups fresh strawberries 1/2 cup sugar, plus 3 tablespoons sugar 2 teaspoons fresh lemon juice 1 1/2 tablespoons cornstarch 1/8 teaspoon ground nutmeg 1/8 teaspoon cinnamon 2-3 tablespoons raspberry or strawberry jam Topping 1/2 cup all-purpose flour 1/2 cup sugar 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 1/4 cup cold unsalted butter Preheat oven to 200 degrees celsius. Combine the berries, 1/2 cup sugar, and lemon juice; set aside for 10-15 minutes. Combine the 3 tablespoons sugar, cornstarch, nutmeg and cinnamon in a small bowl. Combine the berry mixture and the cornstarch mixture. Spread the jam inside the pie shell. Transfer the filling to the pie shell. Place the pie on the center oven rack and bake for 25 minutes. To make the topping: combine the flour, sugar, cinnamon, and salt in a food processor. Cut butter into slices and scatter it over the dry mixture; mix with your fingers or two forks until the mixture resembles fine crumbs. Dump the crumbs into a large bowl and gently rub between your fingers to make large buttery crumbs; refrigerate until ready to use. Take pie from oven and lower temp to 190 degrees celsius. Carefully dump the crumbs in the centre of the pie and spread them evenly over the top with your hands. Return pie to oven and bake for about 25 minutes or until juices bubble thickly around the edge of the pie. (Place foil or a baking sheet on the rack below in case the pie bubbles over.) Transfer pie to a wire rack; let cool. Sit back and enjoy the sweet flavour of victory over the stove.
