What can they be used for? You can recruit them into your party by going to the camp button (lower left corner), or you can sell them to ransom brokers in taverns. Be forewarned though that recruited prisoners have a chance of deserting your party in the night. Putting them into a battle and getting them some experience seems to curb this quite a bit, though. Anyway, Azvareth, when I played, there was only one large realm, Caladria I think, and just 2 or 3 factions. Did you find the Samuri Armour? I have almost all the Khergit lords in one castle prison, and about half the Rhodok ones in Grunwalder.
