He died before the family knew they were looking for her, so he never mentioned it. As for Hershel, I think he really does believe in what he was saying about the walkers still being people, and that he really did believe they could eventually be cured. I don't think he'd have had that reaction if he had just been trying to cover up Sophia. He just knew what they'd do if they found out he was keeping a petting zoo.
