I like magic, though I think this topic has been done before.

The most interesting skill to train for me would be fishing. There tends to be a lot of random events going on at once. You can usually find decent stuff on the ground. I once found a half key.

Strangely with WotLK so near, I wished I could delay it a bit to push through that last TBC content in MH/BT :'(.

I pick running around in circles because that has to be agility! And agility the the most interesting because you can be a monkey while you train it :)

Agility, I'd think. At least, from what you said. Thieving, construction, and farming are a bit interesting.

I'm gonna have to go with fletching. I think it is interesting for its usefullness in making range weapons. Though it can be boring, it is to me the most interesting skill.
